  1. 1

Preheat the oven to 350 degrees F (175 degrees C).

  2. 2

Pat the thighs dry with paper towels. Combine garlic powder, onion powder, salt, and pepper in a small bowl. Sprinkle the seasoning over both sides of the chicken thighs.

  3. 3

Heat olive oil in a 12-inch nonstick, oven-safe skillet over medium heat. Swirl the pan to coat the bottom with the hot oil. Place the seasoned thighs in the skillet and cook until browned, about 3 minutes. Turn the thighs and brown the other side, about 2 minutes. Transfer the browned thighs to a plate and keep warm.

  4. 4

Add the remaining olive oil to the same skillet. Add the mushrooms and cook, stirring, for about 2 minutes. Add the smashed garlic cloves and herbes de Provence and cook, stirring, for 1 more minute.

  5. 5

Move the mushrooms to one side of the skillet and place 3 onion rings in the empty space. Place a browned chicken thigh on top of each onion ring. Continue moving the mushrooms as needed to create space for the remaining onion rings and chicken thighs.

  6. 6

Once all the onion rings and chicken thighs are in the skillet, redistribute the mushrooms evenly around them. Pour the white wine over everything and cover.

  7. 7

Transfer the skillet to the preheated oven and bake until the chicken thighs are no longer pink in the center and the juices run clear, 15 to 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

  8. 8

Serve each chicken piece with a slice of the cooked onion and some mushrooms. Garnish with snipped chives or parsley.

How easyChef Pro scores recipes and products

easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.

The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.

Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.

For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
