Baked Sweet Potato Coins

    Preheat the oven to 350 degrees F (175 degrees C). Lightly coat 2 baking sheets with cooking spray.

    Make a lengthwise cut partway through the center of each sweet potato.

    Using the slicer attachment on a spiralizer, cut the potatoes into coins. Lay the coins out on the baking sheets. Spray them with cooking spray. Season both sides with seasoned salt.
