Gather all the ingredients.
- 2
Chop the leftover turkey and place it in a mixing bowl. Add the pepperoncini peppers and kalamata olives; set aside.
- 3
Heat olive oil in a large pot over medium-high heat. Add the Italian sausage and cook, breaking it into small pieces, until browned and crumbled, about 5 minutes. Add the diced onions, mushrooms, and salt. Cook until the onions are soft and starting to turn translucent, 3 to 4 minutes.
- 4
Deglaze the bottom of the pot with white wine and simmer until the wine has evaporated, about 5 minutes. Add the chicken broth, marinara sauce, water, and cream. Stir in the turkey mixture and bring to a simmer. Reduce the heat to medium-low and simmer for about 15 minutes.
- 5
Meanwhile, bring a large pot of lightly salted water to a boil. Cook the rigatoni in the boiling water, stirring occasionally, about 10 minutes. Drain. Preheat the oven to 400 degrees F (200 degrees C).
- 6
Transfer the cooked rigatoni into the sauce pot and stir to combine well. Transfer the mixture to a large casserole dish. Dot the surface with mozzarella cheese and push it down into the pasta mixture. Sprinkle the top with freshly grated Parmesan cheese.
- 7
Bake in the preheated oven until the sauce is bubbling around the edges and the top is nicely browned, 40 to 45 minutes. Remove from the oven and let sit for 10 to 15 minutes. Sprinkle with parsley.

How easyChef Pro scores recipes and products
easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.
The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.
Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.
For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
