  1. 1

Preheat the oven to 450 degrees F (230 degrees C). Arrange the mushrooms on a baking sheet, drizzle with a little olive oil, and season with salt and pepper. Roast in the preheated oven for about 25 minutes. Let cool slightly, then slice into strips.

  2. 2

While the mushrooms roast, bring a saucepan of water to a boil. Plunge the carrot and radish sticks into the boiling water, then after a few seconds, remove them and plunge them into a bowl of ice water to stop the cooking. In a separate bowl, stir together the rice vinegar, 1/2 cup of lime juice, and 1/2 cup cold water. Transfer the carrot and radish to the vinegar and lime marinade and let them soak for at least 15 minutes, or longer if convenient.

  3. 3

In a small bowl, stir together the remaining lime juice, soy sauce, fish sauce, sesame oil, canola oil, 1/3 cup sugar, and 1/3 cup water to make the sandwich sauce.

  4. 4

To assemble the sandwiches, sprinkle a little of the sandwich sauce onto each half of the French loaves. Place the roasted mushrooms on the bottom half of each roll and sprinkle with a little more sauce. Top with a few slices of jalapeno, a few sticks of carrot and radish (without the marinade), cucumber, basil, and cilantro. Close with the tops of the bread and serve.

How easyChef Pro scores recipes and products

easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.

The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.

Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.

For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
