Scald the milk in a medium saucepan. Add cold water to the scalded milk. Remove 1/4 cup of the liquid; when it cools to lukewarm, mix in the yeast. To the liquid in the saucepan, add the salt, sugar, shortening, and eggs. Add the dissolved yeast to the saucepan and mix well.

Sift and measure the flour into a large bowl. Make a well in the flour and pour the liquids into the well. Stir with a large wooden spoon until the liquid is no longer visible.

Using one hand, mix the dough in the bowl with a swinging, circular motion. Gradually shape the dough into a smooth ball, then knead it in the bowl for 2 minutes. Brush the top with melted shortening. Cover and let the dough rise at room temperature until doubled in size, about 2 hours.
