- 1
Preheat the oven to 450 degrees F (230 degrees C).
- 2
Arrange the beef bones on a large rimmed baking sheet.
- 3
Bake in the preheated oven until the bones are browned and lightly charred in spots, about 40 minutes, turning once halfway through.
- 4
Move the bones to an 8-quart multi-functional pressure cooker (such as an Instant Pot). Add the carrots, onion, garlic, apple cider vinegar, and bay leaves; pour in enough water to cover. Select the Sauté function and bring to a boil, uncovered, for about 20 minutes.
- 5
Skim the surface to remove any foamy bits and impurities; discard them. Add the peppercorns, coriander seeds, and cloves. Cancel the Sauté function.
- 6
Close and lock the lid. Select high pressure according to the manufacturer's instructions and seal the steam release handle; set the timer for 2 hours. Allow 30 minutes for pressure to build.
- 7
Use the natural-release method according to the manufacturer's instructions to release pressure, about 30 minutes. Carefully use the quick-release method to release any remaining pressure, 1 to 2 minutes. Unlock and remove the lid.
- 8
Set a large fine-mesh strainer lined with cheesecloth over a large pot or an 8-cup liquid measure. Remove and discard the bones from the broth, then pour the broth into the prepared strainer. Press on the solids until all liquid has drained. Discard the solids; skim off any surface fat, if needed, and stir the salt into the broth.
- 9
Divide into glasses and serve hot, or let cool to room temperature, about 45 minutes, then refrigerate for up to 3 days.

How easyChef Pro scores recipes and products
easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.
The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.
Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.
For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
