- 1
Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil. Arrange the peppers, cut-sides down, on the prepared baking sheet.
- 2
Roast the peppers in the preheated oven until the skins turn brown and crispy, about 15 minutes.
- 3
Transfer the blackened peppers to a bowl and cover tightly with plastic wrap. Let them steam as they cool, about 20 minutes.
- 4
Peel off and discard the skins. Dice the flesh and set aside.
- 5
Combine the ground chuck and chorizo in a bowl, kneading them together as evenly as possible.
- 6
Heat 1 tablespoon oil in a pot over medium heat. Add the meat and cook, stirring, until browned and crumbly, about 10 minutes. Strain out 90% of the grease.
- 7
Stir the beer, salsa, chile powder, garlic powder, cumin, onion powder, salt, marjoram, black pepper, and cayenne into the meat. Stir in 1/2 of the diced chile peppers. Increase the heat and bring to a boil. Reduce the heat to low and simmer until most of the liquid has evaporated, about 2 hours; do not let all the liquid cook off or the meat will be dry.
- 8
Brush one side of a tortilla with some of the remaining canola oil. On the dry side, about 1/2 inch from one edge, spoon a line of beef and chorizo, sprinkle with Colby-Jack cheese, and top with some diced chile peppers. Roll the filled edge over multiple times until the tortilla forms a tight roll, tucking the first turn under the meat to keep it snug. Place the rolled tortilla seam-side down on the wire rack of an air fryer. Repeat with the remaining tortillas.
- 9
Preheat an air fryer to 375 degrees F (190 degrees C) according to the manufacturer's instructions.
- 10
Fry in the preheated air fryer for 6 minutes. Serve immediately.

How easyChef Pro scores recipes and products
easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.
The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.
Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.
For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
