  1. 1

Preheat the oven to 325 degrees F (165 degrees C).

  2. 2

To make the beef stew: Heat oil in a large Dutch oven over medium-high heat until very hot. Working in 2 batches, cook and stir beef in hot oil until browned. Return all of the meat to the Dutch oven, sprinkle with flour, and stir lightly to coat. Stir in beer, onion, carrot, bay leaves, Worcestershire sauce, garlic, thyme, salt, and pepper. Bring to a boil and cover.

  3. 3

Place the Dutch oven in the preheated oven and cook for 45 minutes. Uncover, stir, and cook until the beef is very tender and the liquid is reduced by half, about 45 more minutes.

  4. 4

Meanwhile, to make the colcannon: Cook bacon in a large, deep skillet over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon on a paper towel-lined plate. Crumble bacon and set aside.

  5. 5

About 30 minutes before the stew is ready, place potatoes in a large pot and cover with salted water. Bring to a boil, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for 1 to 2 minutes.

  6. 6

Place cabbage in a microwave-safe bowl and add water. Cover and microwave on high for about 2 minutes 30 seconds; uncover, watching out for steam, and stir the cabbage. Cover again and microwave until the cabbage is slightly tender but not mushy, about 2 minutes 30 seconds more. Drain excess liquid and set the cabbage aside, covered.

  7. 7

Place potatoes in a large bowl; add warm milk, butter, salt, and pepper. Beat with an electric mixer until smooth and creamy. Stir in cabbage, crumbled bacon, and parsley until well combined.

  8. 8

To serve, place a scoop of colcannon on a plate, make a hollow, and fill it with beef stew.

How easyChef Pro scores recipes and products

easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.

The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.

Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.

For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
