Best BBQ Chicken

Best BBQ Chicken features drumsticks rubbed with a brown sugar–garlic paste for a sweet-savory crust, then grilled and brushed with a tangy ketchup-vinegar-Worcestershire sauce until smoky and juicy. The charred edges and glossy glaze make it perfect for summer cookouts or casual weeknight dinners. Expect balanced sweetness, gentle heat, and a satisfying, sticky finish.

  1. 1

Mash brown sugar, garlic, salt, and pepper together with a mortar and pestle to make a paste. Spoon the paste into a resealable plastic bag. Add the chicken, coat it with the paste, press out excess air, and seal the bag. For best results, marinate in the refrigerator for at least 1 hour or up to overnight.

  2. 2

When ready to cook, heat oil in a small saucepan over medium heat. Add the onion and sauté until softened, about 5 minutes. Stir in the ketchup, vinegar, and Worcestershire sauce. Bring to a simmer and cook until the flavors blend, about 10 minutes.

  3. 3

Meanwhile, preheat an outdoor grill to medium heat and lightly oil the grate. Remove the chicken from the bag.

  4. 4

Grill the chicken on the preheated grill until browned, 3 to 5 minutes, turning once halfway through. Turn off one of the burners and move the chicken to indirect heat. Keep the temperature at 300 to 350 degrees F (150 to 175 degrees C).

  5. 5

Cook the chicken for 20 minutes, turning halfway through. Baste with the sauce, then continue cooking, basting every 10 minutes, until the chicken is no longer pink at the bone and the juices run clear, 20 to 25 minutes more. An instant-read thermometer inserted near the bone should register at least 165 degrees F (74 degrees C).
