Use a meat mallet to pound the tenderloin strips until very thin; set aside.
- 2
Heat avocado oil in a frying pan over medium heat. Fry the onion in the hot oil until deeply browned, about 5 minutes. Lift the browned onion out with a slotted spoon into a small bowl, and set aside for later.
- 3
Peel the kiwi, cut it into quarters, and place in a small bowl for later.
- 4
Warm a small non-stick skillet over medium heat and toast the gram flour until lightly browned and nutty, 2 to 4 minutes; transfer to a small bowl and set aside. In the same skillet, dry-roast the poppy seeds until lightly browned and aromatic, 2 to 4 minutes; remove to a small bowl and set aside.
- 5
Using the same skillet, dry-roast the nutmeg, mace, star anise, and Kashmiri chilies together until fragrant, 2 to 4 minutes. Move the whole spices and chilies to a spice grinder and grind to a coarse powder.
- 6
Add the browned onions, kiwi, ginger paste, garlic paste, and serrano chile to a food processor and grind to a paste, about 30 seconds. Pour in the mustard oil, white vinegar, and yogurt, and pulse until well blended, about 15 seconds.
- 7
Finally, add the roasted poppy seeds, roasted gram flour, roasted ground whole spices, chili powder, cumin, garam masala, black pepper, and salt to the food processor; process the marinade for 1 minute.
- 8
Spoon the marinade into a resealable plastic bag and add the tenderized beef strips. Seal the bag and gently squeeze to coat the beef on all sides with marinade. Refrigerate for at least 6 hours, ideally overnight.
- 9
Take the marinated beef out of the refrigerator; thread the beef strips onto sturdy metal skewers, packing them tightly. Reserve any leftover marinade for basting the kababs as they cook to prevent drying out.
- 10
Preheat an outdoor grill to 500 degrees F (260 degrees C) and lightly oil the grate.
- 11
Grill the kababs on the preheated grill, uncovered, for 5 minutes per side.
- 12
Lower the grill temperature to 350 degrees F (175 degrees C), cover the grill, and cook the kababs for 10 minutes. Turn the kebabs, brush with marinade, and continue cooking until the meat reaches an internal temperature of 170 degrees F (77 degrees C), about 10 minutes more. If the kababs appear dry at any point, brush both sides with a little avocado oil.
- 13
Transfer the skewers to a serving dish. Discard any uncooked marinade. Serve the kababs with naan, sliced red onions, tamarind chutney, and green chutney.

How easyChef Pro scores recipes and products
easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.
The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.
Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.
For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
