Backcountry Carnitas

Backcountry Carnitas brings tender, pull-apart pork with a gentle smokiness and a hint of chile warmth. The slow render concentrates rich pork flavor while onion, garlic, and oregano round it out for balanced depth. It’s perfect for camp cookouts or backyard gatherings, piling into tacos, over nachos, or onto toasted buns.

  1. 1

Cut the pork into 2-inch pieces. Stack 2 (7x10x3-inch) disposable foil baking pans and transfer the pork into them. Season with salt, pepper, and oregano, and toss with your hands until evenly coated.

  2. 2

Cover the pan with a sheet of heavy-duty aluminum foil and crimp tightly around the edges. Set the pan on another large sheet of heavy-duty aluminum foil, then wrap the foil up over the pan with all seams rolled facing up. Repeat with 2 more sheets of aluminum foil.

  3. 3

Place the pan next to a campfire or in a charcoal grill, arranging the burning coals evenly around the pan. Wrap a sheet pan in foil, place it over the pan, and arrange some charcoal on top.

  4. 4

Use a probe or laser thermometer to check the temperature on the surface of the bottom pan and the ambient temperature next to the pan. Maintain a steady temperature between 250 to 300 degrees F (120 to 150 degrees C) by moving charcoal farther from or closer to the pan as needed. If cooking next to a campfire and one side is hotter, rotate the pan occasionally. Cook until falling-apart tender, 4 to 5 hours.

  5. 5

Remove the pan from the fire and let rest for up to 1 hour, or serve right away. Carefully cut the foil and peel it back. Serve in tacos, nachos, or in hot dog or hamburger buns.

How easyChef Pro scores recipes and products

easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.

The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.

Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.

For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
