Season the chicken with salt on both sides.
- 2
Heat olive oil over high heat in a nonstick pan large enough to hold the chicken breasts in a single layer, and cook the chicken on both sides until lightly browned, 3 to 4 minutes per side. While the first side browns, season the tops of the breasts with black pepper and cayenne to taste.
- 3
Once both sides are browned, turn off the heat, transfer the chicken to a plate, and reserve. The chicken can be placed in the refrigerator until needed.
- 4
Melt butter in the pan over medium-high heat, then add the mushrooms and a pinch of salt, and cook, stirring occasionally, until the mushrooms start to brown.
- 5
Stir in the shallots and garlic, and cook, stirring, until the shallots turn translucent, 3 to 5 minutes. Sprinkle in the flour and cook, stirring, until the flour disappears and begins sticking to the bottom of the pan, about 1 minute.
- 6
Pour in the champagne and use a spatula to scrape up any caramelized bits from the bottom. Let the mixture simmer until the champagne has reduced by about half and is thick enough that a spatula dragged across the bottom leaves a trail that takes a few seconds to fill in, 5 to 10 minutes.
- 7
Stir in the tomato paste, fresh thyme, and chicken broth, and wait for the sauce to return to a simmer. Stir in the cream, and let the sauce cook until reduced and thickened enough to coat a spoon, about 10 minutes. Reduce the heat to low.
- 8
Stir in the balsamic vinegar, and return the reserved chicken to the pan. Finish cooking the chicken by gently simmering in the sauce, turning and basting every few minutes, until an instant-read thermometer inserted near the center holds at 150 degrees F (66 degrees C) for 3 to 4 minutes. The time needed to finish cooking will vary, but internal temperature is the reliable indicator of doneness.
- 9
Taste for seasoning, and serve the chicken immediately with the sauce spooned over the top.

How easyChef Pro scores recipes and products
easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.
The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.
Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.
For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
