Melt the butter in a large skillet over medium heat. Roughly chop 1 jalapeno pepper and 1 poblano pepper; add them to the skillet along with the chicken and the garlic. Squeeze the lime over the mixture and add the lime rind to the skillet. Cook, covered, stirring occasionally, until the chicken is no longer pink and the juices run clear, 20 to 25 minutes. Remove from the heat and let cool.
- 2
Meanwhile, position an oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil. Place the remaining jalapeno and poblano peppers on the prepared baking sheet.
- 3
Broil the peppers under the preheated broiler until their skins are blackened and blistered, 5 to 8 minutes. Lower the oven temperature to 375 degrees F (190 degrees C).
- 4
Chop the cooked chicken into small pieces and place it in a bowl. Add the hot peppers to the bowl, cover, and let steam for 10 minutes. Peel the skins from the peppers, remove the seeds, and slice.
- 5
Spread a small amount of enchilada sauce over the bottom of a 9x13-inch pan, just enough to coat it. Arrange 5 tortillas on top. Add 1/2 of the sliced poblano and jalapeno peppers over the tortillas. Lay out 1/2 of the chicken and 1/2 of the Mexican cheese over the peppers. Spoon 1/2 of the remaining enchilada sauce over the cheese layer. Repeat the layering. Top with the chopped cilantro.
- 6
Bake in the preheated oven until the cheese is melted and browning, about 25 minutes.

How easyChef Pro scores recipes and products
easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.
The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.
Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.
For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
