  1. 1

Season the chicken breasts all over with salt and pepper.

  2. 2

Melt 1 1/2 tablespoons butter with the olive oil in a skillet over medium heat. Place the chicken breasts, skin-side down, in the hot butter and oil and cook until browned, about 5 minutes. Flip and cook until the breasts are almost cooked through, about 5 minutes more. Transfer the chicken breasts to a plate.

  3. 3

Melt 1 1/2 tablespoons butter in the same skillet over medium-high heat. Saute the mushrooms with a pinch of salt and a pinch of pepper in the hot butter until golden, 5 to 7 minutes. Add the minced shallot; cook and stir until softened, 2 to 3 minutes. Sprinkle the flour over the top and cook, stirring, until the flour’s bitterness cooks off, 3 to 4 minutes.

  4. 4

Pour the wine into the skillet and bring to a boil; cook and stir until the wine reduces and the sauce thickens, 3 to 4 minutes. Add the chicken stock; bring to a simmer and cook until slightly reduced, 3 to 5 minutes more.

  5. 5

Return the chicken breasts to the skillet, reduce the heat to low, and cook the chicken, turning once, until no longer pink in the center and the juices run clear, about 10 minutes. An instant-read thermometer inserted into the center should register at least 165 degrees F (74 degrees C). Remove from the heat.

  6. 6

Move the chicken to one side of the skillet and tilt the skillet so the sauce gathers at the bottom. Stir the parsley and 1 teaspoon cold butter into the sauce, stirring constantly, until the sauce is shiny and the butter is fully melted. Transfer the chicken breasts to plates and spoon the mushrooms and sauce over the top.

How easyChef Pro scores recipes and products

easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.

The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.

Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.

For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
