Chef John's Kumquat Citrus Marmalade
Chef John's Kumquat Citrus Marmalade balances bright, tangy kumquats with a whisper of star anise and a gentle cayenne warmth. Quarter the kumquats lengthwise; trim away the white center membrane and take out the seeds.
- 2
Cut the quarters into small pieces.
- 3
Put the kumquats in a pot. Add sugar, water, lemon zest (white part only), lemon juice, star anise, and a pinch of cayenne; stir to combine. Cover and let stand at room temperature for 2 or 3 hours so the fruit can macerate, or refrigerate overnight.
- 4
Set the pot over medium-high heat and bring the mixture to a simmer, stirring occasionally. Lower the heat to medium; cook, stirring occasionally, for 10 minutes. Continue cooking, stirring often, until the mixture is thick enough that scraping a spatula across the bottom briefly exposes the pan before the marmalade spreads back, 30 to 40 minutes. The mixture should reach 215 to 220 degrees F (100 to 105 degrees C). Remove from the heat and let it cool slightly for 5 to 10 minutes.

Ladle the warm marmalade into sterilized jars. Cover and let cool to room temperature. Refrigerate until fully chilled.

How easyChef Pro scores recipes and products
easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.
The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.
Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.
For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
