Set the pork roast on a work surface. With a sharp knife, make a lengthwise cut about 1 inch from the edge, slicing down without cutting all the way through. Open the meat flat along the cut. Keeping the knife parallel to the cutting board, keep slicing to unroll the roast into a large, flat piece. When unrolled, make small cuts through any connective tissue or extra-thick areas so the thickness is as even as possible.
- 2
Drizzle the cut surface with 2 teaspoons olive oil. Rub the oil into the meat and generously season with 2 teaspoons kosher salt, black pepper, sage, rosemary, orange zest, garlic, and crushed fennel seeds. Press the seasonings in firmly with your hand, roll up the pork roast, and tie it in several places with kitchen twine.
- 3
Place the pork roast on a rack, set the rack on a plate, and sprinkle the meat with the remaining 1 teaspoon salt. Refrigerate the roast uncovered for 8 hours or overnight to dry the surface.
- 4
Preheat the oven to 450 degrees F (230 degrees C). Lightly oil a baking dish and place the roast in the dish. Rub the meat with 2 teaspoons olive oil.
- 5
Bake in the preheated oven until the exterior is seared, 15 minutes. Reduce the oven temperature to 250 degrees F (120 degrees C) and continue roasting until an instant-read meat thermometer inserted into the center reads 145 degrees F (65 degrees C), about 1 hour more. Loosely tent the roast with foil and let it rest for 10 minutes. Slice thinly to serve.

Mash the anchovy fillet in a small bowl and add red pepper flakes, white wine vinegar, and Italian parsley. Stir to combine. Serve drizzled over the pork.

How easyChef Pro scores recipes and products
easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.
The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.
Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.
For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
