Chicken and Shrimp

Chicken and Shrimp brings tender sautéed chicken, plump shrimp, and golden mushrooms together in a light white wine pan sauce. The savory, garlicky flavors and gentle acidity make it ideal for ladling over pasta or rice on a weeknight, yet it feels special enough for company.     Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Sauté the mushrooms in the hot oil until golden; lift them out with a slotted spoon and set aside.

    Add another 2 tablespoons olive oil to the skillet. Sauté the shrimp, onion, and garlic in the hot oil until opaque. Remove them from the skillet and add to the mushrooms.

    Combine 2 tablespoons flour and 3/4 teaspoon salt in a shallow dish or bowl until well mixed. Dredge the chicken in the flour to coat.

    Add 1 tablespoon olive oil to the skillet and sauté the chicken in the hot oil until no longer pink, 3 to 5 minutes. Transfer the chicken to the mushroom-shrimp mixture.

    Heat the remaining 1 tablespoon olive oil in the skillet and stir in the remaining 1 tablespoon flour. Cook, stirring constantly, for about 30 seconds until browned. Stir in the water, wine, and remaining 1/2 teaspoon salt; boil for 1 minute.

    Reduce the heat to medium-low and return the mushroom-shrimp-chicken mixture to the skillet. Simmer for about 10 minutes, season with pepper, and serve.
