Place 1/8 cup chopped cilantro, orange juice, 1/8 cup olive oil, juice of 1/2 lime, chipotle chili powder, cumin, coriander, garlic powder, onion powder, smoked paprika, salt, and pepper in a resealable plastic bag. Gently press and release the bag several times to mix the ingredients.

Slice the chicken into 1-inch strips across the breast and add them to the marinade. Carefully press out most of the air, seal the bag, and move the chicken around so it gets coated in the marinade. Marinate in the refrigerator for at least 30 minutes, or up to 1 hour.
- 3
Preheat the oven to 400 degrees F (200 degrees C).
- 4
In a large bowl, combine red bell pepper slices, green bell pepper slices, and onion pieces. Add the remaining 1/8 cup olive oil and season with salt and pepper to taste. Stir until all the vegetables are evenly coated with the oil and seasonings.
- 5
Line a 12 x 18-inch sheet pan with foil or parchment paper, then spread the chicken slices and vegetables on the pan in a single layer.
- 6
Bake in the preheated oven until the chicken is cooked through and the vegetables are lightly charred, about 25 minutes.
- 7
Near the end of the baking time, make the cauliflower rice. Heat 1 teaspoon olive oil in a skillet over medium heat. Add the cauliflower rice and water. Cook, stirring often, until the cauliflower softens, about 5 minutes. Drain the cauliflower rice and transfer to a serving bowl. Stir in the melted ghee, reserved 1/2 cup chopped cilantro, juice of 1 lime, and lime zest. Season with salt and pepper.

Assemble the bowls with a layer of cilantro-lime cauliflower rice and a layer of fajita chicken and vegetables. Top with tomato salsa and guacamole.

How easyChef Pro scores recipes and products
easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.
The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.
Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.
For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
