  1. 1

Make the pesto: In a food processor, combine basil leaves, 2 1/2 tablespoons olive oil, walnuts, Parmesan cheese, and garlic; blend until smooth.

  2. 2

Prepare the chicken: Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Cook chicken until golden brown, about 5 minutes per side. Move the chicken to a serving platter.

  3. 3

In the same skillet, cook and stir mushrooms in a single layer until tender, about 5 minutes. Add onion and cook until translucent, about 5 minutes. Stir in garlic and cook until fragrant, about 30 seconds. Add 1/2 of the Gorgonzola cheese and cook until slightly melted. Pour in wine and scrape up the browned bits from the bottom of the skillet. Stir lemon juice, chicken broth, brown sugar, salt, and black pepper into the sauce.

  4. 4

Bring the chicken broth mixture to a boil; reduce the heat and simmer until the sauce reduces by a quarter, 3 to 5 minutes. Stir in the pesto and return the chicken to the skillet. Cook until an instant-read thermometer inserted into the center registers at least 165 degrees F (74 degrees C), about 5 minutes more. Add the remaining Gorgonzola cheese and the chopped tomatoes.

  5. 5

Serve each chicken breast on a plate topped with the sauce.

How easyChef Pro scores recipes and products

easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.

The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.

Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.

For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
