Place the chicken tenders between two sheets of plastic wrap and lightly pound them with a meat tenderizer to flatten slightly.

In a shallow bowl, mix the flour, salt, pepper, and paprika. Dredge the chicken pieces in the flour mixture and set them on a sheet pan until all pieces are coated.

Melt 2 tablespoons butter with 2 tablespoons olive oil in a large skillet over medium heat. Add half of the chicken and cook until browned, about 5 minutes per side. Transfer the chicken to a sheet pan. Add the remaining butter and oil to the pan and repeat with the remaining chicken pieces. Set the chicken aside.

In the same skillet, bring 2 1/2 cups water to a boil and whisk in the beef base until dissolved. Stir in the Madeira wine, return to a boil, and cook until reduced by about one-third. Return the mushrooms, shallots, and garlic to the skillet and let it simmer.

Stir together the cornstarch and cold water in a small bowl. Pour into the skillet and boil until the sauce thickens slightly, at least 1 minute.

Return the chicken to the skillet, lower the heat to low, and cook until the chicken is no longer pink in the center and the juices run clear, 7 to 10 minutes more. Remove from the heat, sprinkle with parsley, and serve.
