Place chicken, carrot, celery, onion, and bay leaf in a stockpot. Add cold water, or enough to cover the chicken. Bring to a simmer over high heat. Reduce the heat to low and simmer gently until the meat can be easily pulled off the bones and is no longer pink in the center, about 1 1/2 hours.
- 2
Remove the meat and bones to a bowl and allow them to cool enough to handle, about 10 minutes. Leave the stockpot over low heat. Separate the meat from the bones and skin, and break it into bite-sized pieces. Set aside.
- 3
Transfer the bones and skin back to the stockpot and continue to simmer over low heat until needed.
- 4
Melt butter in a soup pot over medium-high heat until it starts to brown. Add mushrooms and salt; sauté until the mushrooms are well browned. Add garlic and diced onion, and sauté for 2 to 3 minutes. Strain chicken broth from the stockpot into the pot and bring to a simmer. Add black pepper, cayenne, and thyme. Reduce the heat to medium and simmer for 10 minutes.
- 5
Add rice and cook, stirring occasionally, for 20 minutes. Taste for seasoning and add more salt if needed; remove the thyme stems. Stir in the chicken meat and additional chicken broth to achieve the desired texture. The soup will continue to thicken as the rice swells, so more broth may be needed if you want a thinner soup.
- 6
Let simmer until the chicken is heated through and has absorbed the flavors, and the rice is fully cooked, about 15 minutes. Taste one last time for seasoning. Adjust with more broth as needed. Serve immediately.

How easyChef Pro scores recipes and products
easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.
The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.
Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.
For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
