Bring water to a boil in a stockpot. Meanwhile, rinse the chicken bones under hot water to remove impurities.
- 2
Place the bones into the pot of boiling water. Reduce the heat and simmer until they begin to soften, skimming any fat from the surface of the broth, about 60 minutes. Discard the parboiled bones.
- 3
Place the whole chicken into the pot and simmer until it is no longer pink in the center, 30 to 40 minutes. Remove the chicken from the broth and set it aside to cool. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

Combine the onion and ginger in a skillet over medium-high heat. Cook and stir until browned nicely and fragrant, about 7 minutes. Smash the ginger with the back of a knife on a cutting board. Add the onion and ginger to the broth, then add the chicken broth, rock sugar, fish sauce, pho ga seasoning, and salt.
- 5
Bring a large pot of water to a boil. Add the rice noodles and boil until tender yet slightly firm, 2 to 3 minutes. Drain.
- 6
Peel the skin off the cooled chicken; discard the skin and bones, reserving the meat.
- 7
Serve the noodles in bowls topped with the chicken meat and broth. Garnish with bean sprouts, green onion, cilantro, and Thai basil. Squeeze a wedge of lime into each bowl.

How easyChef Pro scores recipes and products
easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.
The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.
Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.
For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
