Chilaquiles Rojos with Chicken and Cheese
Chilaquiles Rojos with Chicken and Cheese layers crisp tortilla chips in a smoky tomato-chipotle sauce, softened just enough to soak up rich flavor without losing all their crunch. Tender shredded chicken and a duo of melty Mexican blend and tangy cotija make it hearty, while cilantro, green onions, and cool sour cream add freshness. Perfect for a weekend brunch spread or a casual dinner with friends.

Preheat the oven to 350 degrees F (175 degrees C). Grease a 10x15-inch casserole dish.
- 2
Place the drained tomatoes and the chipotle chiles in adobo in a blender; blend until smooth.
- 3
Heat oil in a large skillet over medium heat. Add the onion; cook and stir until softened, about 5 to 7 minutes. Stir in the garlic until fragrant; add the pureed tomato-chile sauce and simmer until it begins to thicken. Pour in the chicken broth and stir in the cumin, oregano, and salt; let it simmer until the mixture thickens. Remove from the heat.
- 4
Combine the tortilla chips with the tomato-chile sauce, folding gently to coat the chips completely. You may need to do this in 2 batches.
- 5
Cover the bottom of the casserole dish with half of the tortilla chip mixture. Sprinkle a layer of Mexican cheese and cotija cheese over it. Add the shredded chicken to cover all of the cheese. Season the chicken with salt and pepper, then sprinkle with 1/2 of the green onions and 1/2 of the cilantro. Spoon 3/4 of the sour cream evenly over the top. Spread the remaining tortilla mixture over this, then top with the remaining Mexican and cotija cheeses. Cover with aluminum foil.
- 6
Bake in the preheated oven until the mixture is bubbly and the cheese is melted, 35 to 45 minutes. Remove from the oven and let it sit for 5 minutes. Serve with sour cream, green onions, and cilantro.

How easyChef Pro scores recipes and products
easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.
The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.
Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.
For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
