In a saucepan over low heat, combine the chicken stock and agar-agar flakes; cook and stir until the agar-agar dissolves, 1 to 2 minutes. Refrigerate and chill until set, 15 to 30 minutes.
- 2
Lightly smash the ginger with the side of a broad knife to release its flavor. Put the ginger and spring onion into 3/4 cup warm water in a bowl; rub them with your fingers to draw out their flavors into the water. The water will turn slightly green. Strain and let the water cool.
- 3
In a bowl, mix the chicken, soy sauce, cooking wine, sesame oil, sugar, and black pepper. Gradually stir in the cooled ginger–spring onion water.
- 4
Finely mince the agar mixture and stir it into the chicken mixture. Cover and refrigerate for at least 4 hours.
- 5
Put the flour in a large bowl; stir in 2/3 cup warm water and vegetable oil. Mix until a smooth dough forms; cover with plastic wrap and let stand for 10 minutes. Cut the dough into small pieces and roll into balls; flatten into rounds that are slightly thicker in the center.
- 6
Spoon some chicken mixture into the center of each dough piece. Draw up the sides to make a bag shape and twist to seal.
- 7
Place the dumplings in a bamboo steamer. Steam over high heat in a skillet with about 1 inch of water until the chicken is no longer pink in the center, 10 to 15 minutes.

How easyChef Pro scores recipes and products
easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.
The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.
Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.
For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
