In a pot over medium heat, combine the milk, half-and-half, and cocoa powder. Cook until warmed through to about 130 degrees F (54 C) without boiling, stirring occasionally to break up lumps and keep a skin from forming on top.
- 2
Meanwhile, in a separate bowl, combine the egg substitute and sugar. Whisk until the sugar is incorporated. Slowly pour in a little of the hot milk mixture to temper the eggs, mix well, then add it back to the pot on the stove. Lower the heat to medium-low and stir until the mixture reaches 185 degrees F (85 C) and is thick enough to coat the back of a spoon, without letting it boil.

Turn off the heat. Add the peanut butter, vanilla extract, and salt, and stir until melted and blended. Let the ice cream base cool, stirring occasionally, until steam stops rising, at least 20 minutes; set the pot over an ice water bath if you like. Cover and refrigerate for 8 hours to overnight.

Pour the base into an ice cream maker and freeze according to the manufacturer's directions until it looks like soft-serve, about 20 minutes. Transfer to an airtight container and freeze until firm, about 4 hours.

How easyChef Pro scores recipes and products
easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.
The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.
Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.
For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
