Rinse the chickpeas under cold running water. Put them in a bowl and cover with at least 4 cups of cold water. Soak for 12 to 24 hours.
- 2
Drain the chickpeas and place them in a large pot. Add enough water to cover the chickpeas by 2 inches. Add the halved onion and bring to a rolling boil over medium-high heat. Lower the heat to a strong simmer. Cook for a few minutes until foam appears on the surface. Skim off the foam and cook, covered, until the chickpeas are tender, 40 to 60 minutes.
- 3
Remove from the heat, season with salt, and set aside. Do not drain so the chickpeas do not dry out.
- 4
Heat the oil in a large pot over medium heat. Add the chopped onion and ginger. Season with salt and pepper and cook, stirring occasionally, until the onion is soft and translucent, about 5 minutes. Add the garlic and cook for 1 more minute. Stir in the turmeric, cumin, and red pepper flakes.
- 5
Drain the chickpeas, reserving 2 cups of the cooking liquid. Add the drained chickpeas to the sautéed onion mixture and stir until well coated with the spices. Cook, stirring occasionally, until the chickpeas are slightly crisp, 8 to 10 minutes.
- 6
Add 2 cups of the chickpea cooking liquid and the coconut milk to the pot. Bring to a simmer, scraping up any browned bits from the bottom. Cook, uncovered, stirring occasionally, until the curry has thickened to your preferred consistency and the flavors have started to meld, 40 to 60 minutes. Taste and season with salt and pepper.

Divide the curry among bowls and top with yogurt and cilantro.

How easyChef Pro scores recipes and products
easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.
The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.
Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.
For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
