Preheat the oven to 325 degrees F (165 degrees C). Lightly coat a roasting pan with cooking spray.
- 2
In a bowl, combine the stuffing mix and water; stir in the apple, cranberries, pecans, and onion. Set aside.
- 3
Place the pork loin on a flat work surface; trim off the fat and silverskin. Slice the pork loin horizontally through the center to within 1/2 inch of the opposite side, taking care not to cut all the way through. Open the two sides like a book. Place the pork loin between two sheets of heavy plastic (resealable plastic freezer bags work well). Pound firmly with the smooth side of a meat mallet to an even thickness of 1/2 inch.
- 4
Season the pork loin with salt and black pepper; spread the reserved stuffing mixture over the cut side. Roll the pork loin into a tight cylinder and secure it with cooking twine. Place it in the prepared roasting pan.
- 5
Bake in the preheated oven until the pork is no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should reach 145 degrees F (63 degrees C). Cover the pork loin with two layers of aluminum foil and let it rest in a warm spot for 10 minutes. Remove the kitchen twine before slicing and serving.

How easyChef Pro scores recipes and products
easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.
The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.
Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.
For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
