    Place a rimmed baking sheet in the oven. Preheat the oven to 450 degrees F (230 degrees C).

    Bring tomatoes, raisins, and red wine to a boil in a medium saucepan over medium-high heat. Reduce to low; simmer uncovered until the raisins are plump and most of the liquid has cooked off, about 20 minutes. Take off the heat. Stir in honey, vinegar, thyme, and salt.

    Meanwhile, cut the polenta into 1/4-inch-thick rounds. Gently toss the polenta with oil in a large bowl. Take the baking sheet out of the oven. Arrange the rounds in a single layer on the baking sheet.

    Bake the polenta rounds in the preheated oven, turning them halfway through, until lightly golden and crisp on both sides, about 15 minutes.
