Quick Paleo Chicken Marsala

Quick Paleo Chicken Marsala pairs tender chicken cutlets with a rich Marsala and chicken stock reduction, studded with sautéed cremini mushrooms and salty ribbons of prosciutto. The glossy pan sauce is balanced by shallot and fresh parsley, creating a warmly aromatic, slightly sweet and savory profile. Ideal for a weeknight dinner that still feels special or a cozy date-night meal.

  1. 1

Place the chicken cutlets between two sheets of plastic wrap on a flat, sturdy surface. Pound them firmly with the smooth side of a meat mallet to a 1/4-inch thickness. Season both sides with salt and pepper.

  2. 2

Heat 1 tablespoon olive oil and 1 tablespoon butter in a large skillet over medium-high heat until the butter melts. Add the chicken cutlets to the skillet; cook until both sides are golden, about 5 minutes per side. Remove the chicken from the pan and set aside.

  3. 3

Reduce the heat to medium; add olive oil to the skillet if needed. Add the prosciutto and shallots; cook and stir until warmed, about 1 minute. Stir in the mushrooms and cook until browned, about 5 minutes. Season with salt and pepper. Pour the wine into the skillet; simmer until the flavors meld, about 1 minute. Add the chicken stock; simmer and stir until the sauce thickens slightly, about 1 minute.

  4. 4

Stir 1 tablespoon butter into the skillet. Return the chicken to the pan; simmer until the chicken is heated through, about 1 minute. Garnish with parsley, salt, and pepper. Bella mushrooms can be used instead of cremini mushrooms. Do not crowd the pan. Remove the chicken to a large platter to keep warm while cooking the remaining cutlets. I sautéed the chicken in advance (just to brown) and placed it in a baking dish, then covered and refrigerated it. When ready to prepare dinner, I sautéed the remaining ingredients, poured them over the chicken in the baking dish, and baked at 300 degrees for 15 minutes.

How easyChef Pro scores recipes and products

easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.

The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.

Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.

For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
