Combine rice, garlic, parsley, thyme, rosemary, black pepper, 1/2 teaspoon salt, and cayenne in a mixing bowl. Pour in butter and mix until thoroughly combined. Cover and refrigerate for at least 30 minutes.
- 2
Preheat the oven to 425 degrees F (220 degrees C). Lightly oil an oven-safe skillet or roasting pan.
- 3
Loosen the skin on top of the chicken near the legs, just enough to slide a small rubber spatula between the breast meat and the skin. Slowly push the spatula under the skin on either side of the breastbone, all the way to the front of the chicken, taking care not to enlarge the opening near the cavity.
- 4
Stuff the chilled rice mixture evenly under the skin, one spoonful at a time, pushing it toward the front as you go to create an even layer of rice on either side of the breastbone. Stuff as much as possible under the skin without tearing it, smoothing and shaping the mixture as you work. Place the remaining rice in the cavity.
- 5
Place the chicken in the prepared roasting pan. Tie the legs together with kitchen string and season the skin with the remaining salt.
- 6
Roast in the preheated oven until the meat is no longer pink at the bone and the juices run clear, about 1 hour. An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should read 165 degrees F (74 degrees C). Transfer the chicken to a plate or cutting board and let it rest for 10 minutes.
- 7
While the chicken rests, add vinegar to the fat and drippings in the skillet or roasting pan and set the pan over medium-high heat. Bring to a boil, scraping up all the caramelized bits from the bottom of the pan. Boil until slightly reduced, 3 to 5 minutes. Strain if preferred. Serve with sliced chicken, garlic rice, and crispy skin.

How easyChef Pro scores recipes and products
easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.
The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.
Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.
For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
