    Halve the lemon and squeeze out the juice. Cut 2 rind pieces into chunks.

    Combine the lemon juice and rinds in a large glass or ceramic bowl with red wine, onion, garlic, salt, and pepper; mix thoroughly. Add the lamb and toss to coat evenly. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 8 hours or up to 18 hours.

    Take the lamb out of the marinade and shake off the excess. Discard the leftover marinade. Thread the lamb onto skewers.

    Preheat an outdoor grill to medium heat and lightly oil the grate.
