  1. 1

Set the chicken breasts on a flat work surface. Cut each one horizontally through the center, taking care not to slice all the way through. Open the two sides like a book. Place each between two sheets of heavy plastic and pound firmly with the smooth side of a meat mallet to a 1/4-inch thickness.

  2. 2

Preheat the oven to 375 degrees F (190 degrees C).

  3. 3

Season the insides of the chicken with salt, pepper, and garlic powder. Arrange the spinach, tomato, onion, and feta cheese over the chicken in that order. Roll the chicken around the filling and tie the ends with butcher's twine.

  4. 4

Stir together the olive oil, lemon juice, garlic, oregano, rosemary, thyme, salt, and pepper to make the sauce.

  5. 5

Heat a cast iron skillet over high heat. Add the chicken and cook until browned, about 5 minutes per side. Brush half of the sauce on top.

  6. 6

Bake in the preheated oven for 30 minutes. Pour the remaining sauce over the chicken. Continue baking until an instant-read thermometer inserted into the center reads at least 165 degrees F (74 degrees C), 10 to 15 minutes more.

  7. 7

Remove the chicken and let it rest for 5 minutes. Slice into pinwheels and serve with the pan juices.

How easyChef Pro scores recipes and products

easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.

The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.

Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.

For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
