Grilled Pineapple Lime Chicken Thighs

    Combine pineapple juice, the zest and juice of 1 lime, olive oil, adobo seasoning, salt, and cayenne in a large resealable plastic bag. Gently squeeze the bag to mix the marinade.

    Add the chicken thighs to the marinade and gently squeeze the bag to coat the chicken. Arrange the thighs in a single layer inside the bag. Gently press out the air, reseal, and refrigerate for 1 hour or up to 2 hours, turning about every 20 minutes.

    Preheat an outdoor grill to 400 degrees F (200 degrees C). Clean and oil the grates.

    Place the chicken on the oiled grate and drizzle with marinade. Grill for 2 to 3 minutes, give each piece a quarter turn, and grill for another 2 to 3 minutes. Turn the chicken over and repeat. Grill until the chicken is no longer pink in the center and the juices run clear. An instant-read thermometer inserted near the center should read 165 degrees F (74 degrees C).

    Transfer the chicken to a plate, cover with foil, and let rest for 8 to 10 minutes.

    Cut the remaining lime in half and squeeze 1 lime half over the chicken. Slice the other lime half. Sprinkle pineapple pieces over the chicken; garnish with the lime slices and cilantro sprigs.
