    Place a chicken breast flat on your work surface. Using the tip of a sharp boning or paring knife, cut a pocket in the chicken breast through a 2-inch slit on the side. Repeat with the remaining chicken breast. Evenly stuff the chicken breasts with the vegetable mixture.
