Dissolve kosher salt and sugar in water in a large container to make a brine. Submerge the chicken in the brine, cover, and refrigerate until the meat is seasoned, 1 to 4 hours.
- 2
Mix unsalted butter, Dijon mustard, garlic, and thyme in a bowl and let it sit at room temperature while the chicken marinates in the brine.
- 3
Take the chicken out of the brine, rinse the chicken, and discard the brine. With a sharp, sturdy knife or poultry shears, cut along both sides of the backbone from tail to neck through the bones and remove the backbone and tail. Flip the chicken breast side up, spread it open, and strike firmly with the heel of your hand between the two breasts to crack the breastbone. Press the chicken flat with your hands.
- 4
Thoroughly dry the chicken with paper towels on both sides. Loosen the skin over the breast and thighs with your fingers. Stir 1 pinch of black pepper into the seasoned butter mixture and spread the butter generously under the skin. Pat the chicken dry again. Place the flattened chicken, breast side up, on the top of a 2-part broiler pan. Rub the chicken with vegetable oil and sprinkle with more black pepper.
- 5
Position a rack in the lower third of the oven and preheat to 500 degrees F (260 degrees C). Line the bottom of the broiler pan with aluminum foil.
- 6
Arrange the potato slices in the bottom of the broiler pan on the aluminum foil; toss the potatoes with olive oil and season with salt and black pepper. Set the top of the broiler pan holding the chicken over the bottom pan.
- 7
Roast the chicken and potatoes in the preheated oven for 20 minutes; rotate the pan and continue roasting until an instant-read thermometer inserted in the thickest part of a thigh registers 160 degrees F (70 degrees C), about 20 more minutes. Let the chicken rest on a platter or cutting board while you blot excess chicken fat from the tops of the potato slices. Invert the bottom of the broiler pan to release the potatoes into a serving dish and blot again with paper towels. Cut the chicken into quarters with a sharp knife and serve with the potatoes.

How easyChef Pro scores recipes and products
easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.
The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.
Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.
For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
