Roasted Carrots with Honey-Balsamic Glaze

    Trim the ends from the carrots and cut them diagonally into thirds. If the carrots are large, first cut them lengthwise, then diagonally into thirds so all pieces are about the same size.

    Combine the olive oil, salt, and pepper in a small bowl. Spread the carrots out on the baking sheet and drizzle them with the olive oil mixture until all are coated.

    Roast in the preheated oven until tender and beginning to brown, 25 to 30 minutes.
