  1. 1

In a very large bowl, whisk together mustard, honey, vinegar, Sriracha, paprika, pepper, and salt until well combined.

  2. 2

Set the chicken breast-side down on a work surface. Starting at the tailbone, use scissors or a knife to cut along both sides of the backbone, staying as close to the bone as possible. Discard the backbone and trim off any extra fat or skin.

  3. 3

Locate the cartilage where the wishbone meets in a "v" and make 1 shallow cut through it with a knife. Press down on both sides to flatten the chicken and reveal the breastbone, making another cut in the cartilage if needed. Run your fingers along the breastbone until the remaining cartilage releases. Make a few shallow cuts in the legs, thighs, and wings to promote even cooking.

  4. 4

Place the chicken in the bowl with the marinade and toss until fully coated. Marinate, breast-side down, in the refrigerator for 4 to 12 hours.

  5. 5

Preheat the oven to 425 degrees F (220 degrees C). Line a rimmed baking sheet with aluminum foil.

  6. 6

Set the chicken skin-side up on the prepared baking sheet. Season with salt and reserve the marinade for basting.

  7. 7

Roast in the center of the preheated oven until the chicken begins to darken in spots, 35 to 40 minutes.

  8. 8

While the chicken roasts, pour the excess marinade into a small saucepan. Add chicken stock to thin the sauce slightly and bring it to a boil, then remove from the heat.

  9. 9

Baste the chicken with the sauce and continue roasting, basting again if desired, until the bone is no longer pink and the juices run clear, about 15 minutes more. An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should register 165 degrees F (74 degrees C).

  10. 10

Remove the chicken from the oven and brush any rendered fat and accumulated pan juices onto the chicken.

  11. 11

Move the chicken to a serving platter and garnish with green onions. Slice and serve, spooning any remaining sauce over the top.

How easyChef Pro scores recipes and products

easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.

The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.

Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.

For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
