  1. 1

Preheat the oven to 400 degrees F (200 degrees C), and line a sheet pan with foil.

  2. 2

Prick the potatoes all over with the tip of a knife. Coat the potatoes all over with oil, then place them on the prepared sheet pan.

  3. 3

Bake in the preheated oven until the centers of the potatoes are soft when pierced with a knife, about 1 hour. Let them cool until just warm, about 10 minutes.

  4. 4

Meanwhile, put the bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the slices on paper towels; chop when cool enough to handle, and set aside.

  5. 5

Slice the large center parts of the jalapenos into 36 thick rings, and remove the seeds. Dice the remaining parts of the peppers, and additional peppers as needed to make about 1/2 cup, or more if desired.

  6. 6

Add the cream cheese and diced jalapeno to a bowl. Set aside about 1/2 cup Cheddar cheese for sprinkling on top of the poppers, and add the remaining cheese to the bowl. Mix well and set aside.

  7. 7

Lay each potato on its widest, flattest side on a cutting board, and cut it in half lengthwise. Scoop out the cooked potato into a bowl, leaving about 1/8 inch of cooked potato attached to the skin.

  8. 8

Line a sheet pan with foil and coat it with oil. Transfer the scooped potato skins to the sheet and season each one with salt. Divide the cheese filling among the 12 potato skins, and spread it out with a spoon.

  9. 9

Top the cheese filling with bacon, then place 3 jalapeno rings on top of each skin. Scatter the reserved cheese over the top.

  10. 10

Increase the oven temperature to 475 degrees F (245 degrees C).

  11. 11

Bake in the preheated oven until the cheese is bubbling and the edges of the potatoes are crispy, 25 to 30 minutes.

How easyChef Pro scores recipes and products

easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.

The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.

Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.

For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
