    For the slurry, thoroughly mix the water, flour, and salt in a small bowl; set aside. You can use any flavorful meat or vegetable broth instead of the water.

    Add the vegetable oil and sesame oil to a high-quality non-stick pan and set it over medium-high heat.

    Arrange the dumplings in the pan flat side down in a circular pattern. Once they start sizzling, cover tightly and let them brown for about 3 minutes.

    Uncover the pan, whisk the slurry, and pour it around the dumplings. Reduce the heat to medium, and cook until the moisture in the slurry has evaporated and the “lace skirt” begins to brown. Continue cooking until the skirt is crisp and slides across the bottom when you shake the pan. It should lift from the edges and release; if it is stuck around the edge, carefully use the edge of a spatula to loosen it. If cooked long enough, the skirt will release from a good non-stick pan.

    Remove the pan from the heat and place a plate over the dumplings. Invert carefully, making sure any dripping oil does not fall on your hand or arm. Doing this over a towel is best to catch the drips. Serve immediately with your favorite dumpling or wonton dipping sauce.
