  1. 1

In a blender or large food processor, combine the vegetable broth, raspberries, raspberry jam, and red wine vinegar. Purée until smooth. Pour into a large bowl and set aside.

  2. 2

Heat a nonstick skillet over medium-high heat. Quickly sear the leg of lamb on all sides, then remove it from the pan. Pierce the meat every inch or so with the tines of a fork. Place it in a bowl with the raspberry sauce. Cover and refrigerate for at least 12 hours to marinate. Turn occasionally.

  3. 3

Preheat the oven to 350 degrees F (175 degrees C). Remove the lamb from the marinade and pat it dry. Place it on a roasting rack in a roasting pan.

  4. 4

Roast the lamb for 1 hour in the preheated oven, or until a meat thermometer inserted into the meat reads 140 degrees F (62 degrees C). Let it stand for 10 to 15 minutes before carving. The temperature should rise by another 5 to 10 degrees while it rests for medium-rare. If you prefer it more well-done, wait until it reaches 145 degrees F before removing it from the oven.

  5. 5

While the lamb is roasting, transfer the marinade to a saucepan. Bring it to a boil and add the rosemary. Boil over medium-high heat until the sauce has reduced and thickened slightly, about 10 minutes. Carve the lamb and spoon the sauce over it to serve.

How easyChef Pro scores recipes and products

easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.

The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.

Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.

For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make.
