Preheat the oven to 350 degrees F (175 degrees C).
- 2
Place the bacon in a skillet over medium-high heat. Cook for just a few minutes, until partially cooked. Set aside.
- 3
Meanwhile, bring a pot of lightly salted water to a rolling boil. Add the lobster tails, and boil for 5 to 6 minutes, until they are colored. Drain, let cool slightly, then remove the shells by snipping up the center with scissors and peeling them away to the side.
- 4
Slice a large pocket into the side of the tenderloin. (A butcher can do this for you as well.) Stuff the lobster tails into the pocket. Combine 1 tablespoon of butter with the lemon juice; pour over the lobster tails. Close the pocket, and tie the roast closed with cotton string at 1-inch intervals. Place the roast in a shallow roasting pan.

Bake for about 35 minutes in the preheated oven for rare, or continue roasting to your preferred doneness. The internal temperature of the roast should be at least 145 degrees F (70 degrees C) for rare. Lay the bacon over the top of the roast, and continue baking until crisp.
- 6
Melt the remaining 1 cup of butter in a saucepan over medium heat. Add the green onion, wine, and garlic salt. Cook until the onion is tender. Slice the roast and arrange it on a platter. Spoon the sauce over the meat.

How easyChef Pro scores recipes and products
easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.
The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.
Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.
For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
