Mama’s Fantastic Fajitas
  1. 1

Whisk the lime juice, cilantro, olive oil, jalapeño, garlic, and cumin in a large glass or ceramic bowl until well mixed. Add the skirt steak, bell peppers, and onion; toss to coat evenly. Cover the bowl with plastic wrap and marinate in the refrigerator for 30 minutes to 2 hours.

  2. 2

Remove the steak, bell peppers, and onion from the marinade and shake off any excess; discard the remaining marinade.

  3. 3

Heat 1 teaspoon vegetable oil in a large skillet over high heat until it shimmers. Add the steak; cook and stir until browned on all sides and still pink in the center, about 3 minutes per side. Transfer the steak to a plate, tent with aluminum foil, and let it rest for 5 minutes.

  4. 4

Meanwhile, heat the remaining 1 teaspoon oil in the same skillet over medium-high heat. Add the bell peppers and onion; cook until just tender but still slightly firm, 5 to 6 minutes. Return the steak to the skillet; cook and stir until heated through.
