- 1
Preheat the oven to 350 degrees F (175 degrees C).
- 2
In a mixing bowl, whisk together red miso paste, maple syrup, rice vinegar, soy sauce, garlic powder, black pepper, kosher salt, and sriracha until smooth.
- 3
Place the beef in the bowl and coat well on both sides, then poke the beef all over with a fork so the marinade can soak into the meat.
- 4
Add onions and minced garlic to a braising pan and spread them out evenly. Place the beef on top with all the sauce mixture. Spread the sauce over the beef, and pour 2/3 cup water around the meat.
- 5
Transfer the pan to the preheated oven and roast for 1 hour. Remove from the oven, flip the beef, and spoon the pan drippings over the top. Return to the oven and roast for another 1 hour. Cover the pan and continue roasting for 1 more hour.
- 6
Remove from the oven and let cool. Spoon the caramelized onions over the meat. Cover and refrigerate overnight (NOTE: the meat can be cut up and the recipe finished as shown without the overnight refrigeration step).
- 7
The next day, cut the cold beef into 1/2 inch pieces and return it to the pan. Add 3 cups of water, set over high heat, and bring to a simmer. Simmer, stirring occasionally, until the meat is tender, about 45 minutes.
- 8
Stir bell peppers, green onions, and bok choy into the pan. Increase heat to medium and cook until the vegetables are as tender as you like, 5 to 10 minutes.
- 9
Meanwhile, bring a large pot of lightly salted water to a boil. Cook the bucatini in the boiling water, stirring occasionally, until slightly firm, 9 to 12 minutes.
- 10
Mix cornstarch with 2 teaspoons of water in a small bowl. Stir it into the sauce (only if you prefer a thicker sauce) and cook for about 1 minute, stirring. Use tongs to transfer the cooked noodles to the pan and toss to combine.
- 11
Serve right away with cilantro and green onions if desired.

How easyChef Pro scores recipes and products
easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.
The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.
Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.
For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
