  1. 1

Preheat the oven to 500 degrees F (260 degrees C). Line a rimmed baking sheet with aluminum foil.

  2. 2

Lightly pound the chicken breasts between 2 sheets of plastic until evenly thick. Set the breasts on a plate and season one side with kosher salt and black pepper. Sprinkle with flour and press it to coat the entire surface so it adheres. Turn and repeat on the second side with salt, pepper, and flour.

  3. 3

Brush off any excess flour from the plate; return the chicken breasts to the plate. Pour the beaten egg over the breasts and coat both sides. Cover the bottom of a second plate with half the bread crumbs. Move the chicken to the bread crumbs. Press crumbs up the sides of the chicken. Sprinkle on the remaining crumbs and coat both sides thoroughly.

  4. 4

Heat 1/2 inch of olive oil in a skillet over medium-high heat. Cook the chicken until crispy and golden, 2 to 3 minutes per side. Transfer to the prepared baking sheet.

  5. 5

Combine the ricotta and Cheddar cheese in a bowl. Stir in salt, black pepper, cayenne, and olive oil. Spread half the cheese mixture over each breast, stopping short of the edges. Dust with Parmigiano-Reggiano cheese and drizzle with olive oil.

  6. 6

Bake on the center rack of the preheated oven until the cheese is melted and the chicken is no longer pink in the center and the juices run clear, 10 to 12 minutes. An instant-read thermometer inserted into the center should register at least 165 degrees F (74 degrees C).

  7. 7

To serve, ladle the heated marinara sauce in a wide circle on warm plates. Set the chicken in the center and sprinkle with chopped parsley.

How easyChef Pro scores recipes and products

easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.

The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.

Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.

For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
