- 1
Season the chicken on both sides with salt, onion powder, black pepper, and paprika.
- 2
Heat 2 tablespoons of olive oil in a 5- to 6-quart Dutch oven over medium-high heat. Add the chicken thighs and cook until seared and lightly browned, 4 to 5 minutes per side. Transfer them to a plate.
- 3
Lower the heat to medium. If needed, add the remaining 1 tablespoon olive oil to the Dutch oven. Stir in 6 cloves minced garlic and cook until fragrant, about 30 seconds.
- 4
Add 1/4 cup butter. Once melted, stir in the rice until fully coated. Pour in the chicken broth and scrape the bottom of the Dutch oven with a wooden spoon to loosen any browned bits. Bring to a boil over high heat, then reduce the heat to medium-low, cover, and simmer for 10 minutes.
- 5
Mix melted butter with the remaining 2 cloves minced garlic in a small bowl; set aside.
- 6
Nestle the chicken thighs into the rice mixture. Brush the tops of the chicken with the garlic butter mixture.
- 7
Cover and continue cooking until the rice has absorbed all the liquid and the chicken is cooked through (an instant-read thermometer inserted into the thickest part should read at least 165 degrees F (74 degrees C)), 10 to 15 minutes more.

How easyChef Pro scores recipes and products
easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.
The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.
Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.
For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
