Homestyle Peach Jam

Homestyle Peach Jam balances juicy, sun-ripened peach flavor with a gentle sweetness and a tender, spoonable texture. Homestyle Peach Jam

    Assemble all the ingredients.

    Mash 1 cup of the chopped peaches in the bottom of a large saucepan. Add the remaining peaches and place the pan over medium-low heat.

    Bring to a gentle boil and cook until the peaches turn mostly liquid with a few small pieces remaining, about 20 minutes.

    Transfer the cooked peaches to a bowl, then measure 6 cups of peaches back into the pan (save any extra peaches for another use). Add the sugar and bring to a boil over medium heat.

    Slowly stir in the dry pectin; boil for 1 minute.

    Take off the heat and ladle the jam into hot, sterilized jars, leaving 1/4 inch of headspace. Slide a clean knife or thin spatula around the inside of the jars to release air bubbles. Wipe the rims with a damp paper towel to remove any residue.

    Set a rack in the bottom of a large stockpot and fill it halfway with water. Bring to a boil and lower the jars, spaced 2 inches apart, into the boiling water using a holder. Add more boiling water to cover the jars by at least 1 inch. Return to a rolling boil, cover, and process for 10 minutes.

    Carefully lift the jars out of the stockpot and let the jam cool, then store on a shelf in a cool, dark place. Serve and enjoy!
