Portuguese Braised Chicken

Portuguese Braised Chicken brings tender, wine-simmered chicken together with smoky linguica, sweet onion, and green bell pepper in a savory broth brightened with fresh orange at the finish. The citrus lifts the rich pan juices while herbs and a touch of heat round out the flavor. It’s a cozy dish ideal for a relaxed dinner or a casual gathering.

  1. 1

Warm the oil in a Dutch oven over medium heat. Add the sausage, onion, and bell pepper; cook, stirring, until the vegetables soften and the sausage is browned, about 10 minutes. Lift them out with a slotted spoon to a plate, leaving the drippings in the pot.

  2. 2

Mix the oregano, basil, salt, and pepper in a small bowl and rub it onto the chicken. Add the chicken to the pot, increase the heat to medium-high, and brown it on all sides, about 10 minutes.

  3. 3

Stir the sausage and vegetable mixture back into the pot along with the wine, broth, bay leaves, and red pepper flakes. Bring to a boil; lower the heat to medium-low and simmer, covered, until the chicken is no longer pink in the centers, 35 to 45 minutes.

  4. 4

Remove and discard the bay leaves. Serve the chicken with orange wedges.
