Rub the chicken breast halves with salt and chopped ginger. Be careful with the ginger—you want to season the meat without overwhelming the sauce. Discard the ginger. Lightly dust the chicken with flour.
- 2
Heat 3 tablespoons of olive oil in a large skillet over medium-high heat. Brown the chicken in the hot oil, starting with the skin side. The chicken should be about 3/4 cooked, with the skin browned and crisp. Remove from the pan and set aside.
- 3
Heat the remaining 3 tablespoons of olive oil in the skillet, and saute the chopped onion until soft and translucent. Deglaze the pan with the chicken broth. Stir in the cream and sour cream. Reduce the heat to low, and simmer until the mixture has reduced by 1/4. Stir in the white wine until well blended.
- 4
Add the tarragon to the pan, and set the chicken breasts on top of the tarragon. Cook over low heat, spooning the sauce over the chicken, until the sauce is very thick, the chicken is no longer pink, and the juices run clear.
- 5
Bring one inch of lightly salted water to a boil in a large saucepan. Trim one inch from the bottoms of the asparagus stems. Place the asparagus in the pan, cover, and steam for 5 to 7 minutes, or until tender but still bright green. Remove from the heat and drain.
- 6
To serve, arrange 4 asparagus spears on each plate with all tips facing the same direction. Place one chicken breast skin side up on each plate so it covers the asparagus stems while leaving the tips exposed. Squeeze lemon over the asparagus. Spoon sauce over the chicken and alongside the asparagus.

How easyChef Pro scores recipes and products
easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.
The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.
Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.
For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
