Preheat the oven to 375 degrees F (190 degrees C). Lightly coat 8 (2 1/2-inch) muffin cups with cooking spray.
- 2
In a saucepan, combine condensed soup, coconut milk, and curry paste and bring to a simmer over medium-high heat. Cook, stirring often, until the curry paste is blended in and the sauce thickens slightly, about 3 minutes. Remove from heat and stir in the chicken, frozen vegetables, and cilantro.
- 3
On a lightly floured surface, roll each pie crust into an 11-inch circle. Cut out 8 (4-inch) circles and 8 (3-inch) circles from the crusts, rerolling scraps if needed. Press the 4-inch circles into the bottoms and up the sides of the prepared muffin cups, gently stretching to reach the tops of the cups.
- 4
For the egg wash, beat the egg and water together in a small bowl.
- 5
Divide the filling evenly among the crust-lined cups, about 1/3 cup each. Brush the edges of the filled crusts with egg wash; place the 3-inch crust circles on top, gently pressing the edges to seal. Crimp the edges with fork tines as desired. Using a paring knife, cut two 1/4-inch-long slits on top of each pie. Lightly brush the tops with egg wash.
- 6
Bake in the preheated oven until the pies are slightly puffed and browned on top, about 20 minutes. Cool in the muffin cups for 10 minutes. Loosen the edges with a thin spatula, then carefully remove from the muffin cups. Garnish with additional cilantro.

How easyChef Pro scores recipes and products
easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.
The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.
Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.
For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
