Combine the rhubarb, chipotle peppers with sauce, ruby port, and sugar in a saucepan and bring to a boil; reduce to a simmer over medium-low heat and cook until the rhubarb is tender, about 15 minutes. Remove from the heat and let cool.
- 2
Puree the rhubarb-chipotle mixture in a blender until smooth. Put the ground pork in a large bowl and mix in 2/3 of the blended sauce until thoroughly combined. Season with salt and black pepper.
- 3
Heat the vegetable oil in a skillet over medium heat. Shape about 2 tablespoons of the pork mixture into a small patty and pan-fry until browned and no longer pink, about 5 minutes per side. Taste the cooked patty, then mix the remaining rhubarb-chipotle sauce, salt, and black pepper to taste into the uncooked pork mixture (do not taste the uncooked pork).

Soak the corn husks in warm water in a large bowl until softened, about 10 minutes. Heat a smoker to 250 to 275 degrees F (120 to 135 degrees C) and add wood chips to the smoker.
- 5
Scoop about 1/3 cup to a scant 1/2 cup of the seasoned pork mixture and shape it into a sausage; place it in a soaked corn husk and tie the ends of the husk with twine to enclose the sausage. If a husk is too narrow to cover the sausage, use 2 husks per sausage. Repeat with the remaining husks and pork mixture.
- 6
Smoke the sausages in the preheated smoker until fully cooked and an instant-read thermometer inserted into the center of the thickest sausage reads 160 degrees F (70 degrees C), about 2 hours.

How easyChef Pro scores recipes and products
easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.
The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.
Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.
For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
